Variety and potential variations for almond preparations are virtually boundless. The almonds are available chopped, slivered, ground, as whole and half almonds, blanched and unblanched, roasted and unroasted almonds and you can also choose from various sizes and thicknesses of cut.

Some 75% of the world‘s hazelnuts are grown in Turkey. For many years now, Moll has been working very closely with a manufacturer of high quality hazelnut preparations here, which produces the hazelnut preparations according to the IFS and BRC standards. However, if smaller quantities are required and the preparations are needed at short notice, we are also able to manufacture the articles at our main factory in Berlin. Of all nuts, hazelnuts are probably the most well-known and are used in the confectionery industry, in bakery products, in the ice-cream industry, in the manufacture of cereals, in the cheese industry and at home as a baking ingredient and for decorating purposes.

Walnut preparations

Walnut preparations
Only the real walnut (Juglans regia) is processed at Moll. The nuts are available from various sources (e.g. France, Moldavia, China or California). In order to obtain perfect-looking walnut halves, they must be cracked open by hand. A great variety of sizes are also available as preparations.

Pistachio preparations

Pistachio preparations
Pistachios are mainly grown in Iran, Turkey and the USA. The qualities differ in terms of taste and colour intensity. Pistachio preparations (especially chopped), which are very popular due to their green colour, are used in the confectionery industry, in bakery products, in ice-cream and meat and sausage products (particularly mortadella).

Cashew nuts are mainly grown in Brazil, India and Vietnam and their nutty, sweet flavour is gaining in popularity all over the world. Preparations in highest demand are those from roasted cashew nuts, not least also due to the rather attractive raw material prices.

Macadamia preparations

Macadamia preparations
Macadamias are often referred to as „the queen of nuts”. This tasty nut is originally from Australia and was named after the scientist John „MacAdam” (1827 - 1865). Today, macadamias are also grown in Hawaii, in South Africa, Kenya and Brazil. Moll roasts and chops macadamias in all desired sizes and specifications.

Pecan nut preparations
Botanically, pecans are similar to walnuts although they differ in shape and, in particular, owing to their mild taste. Pecans are mainly grown in the USA and are becoming more and more popular in Europe as snack products, as whole nuts or as preparations for the confectionery industry.

Brazil nut preparations

Brazil nut preparations
Brazil nuts derive their Brazilian name castanhas-do-Pará from the state of Pará. In addition to Brazil, the nuts are also native to other South American states such as Peru, Bolivia, Venezuela, Mexico and Columbia. In Western Europe Brazil nuts are especially popular as nibbles. The Brazil nut and Brazil nut preparations are just being discovered as a food ingredient for the confectionery industry.

Coconut preparations

Coconut preparations
Strictly speaking, coconuts are not actually nuts but stone fruits of the tropical coconut palm. The dried flesh of the coconut is also called copra and serves as the basis for many interesting product ideas. The coconut is native to countries such as Indonesia, India and the Philippines.
